This fall I have gotten back into a cooking kick. I’ve been going back to old recipes, and making new ones. I’ve shared about this with some of you, and you’ve been asking for the recipes.
So as we head into the final month of the year, here are some of my favorite recipes for the colder, Minnesota months, and for your holiday gatherings with friends and family.
Balsamic Roast Beef

This is my go-to for an easy crock-pot meal. I serve it with mashed potatoes, rolls, and a veggie. If I have too many leftovers, it freezes really well.
Roasted-Potato Fennel Soup by Ina Garten

This is a classic recipe that reminds me of my youth. It pairs well with Ina Garten’s Parmesan Crouton recipe below. Also for this and the Butternut Squash and Apple Soup below I highly recommend investing in an immersion blender.

I love “sip-able” soups, and this is my go-to for a healthy meal while working. It also freezes well in pint size mason jars, so I can just take it out to thaw, and then heat it up and sip.
Chicken Chili

This is a new recipe for me. I wasn’t in the mood for ground beef chili this fall and decided to look in my old cookbooks for an easy, white chicken chili recipe that is dairy-free, and tomato free (Alice doesn’t love diced tomatoes). This is so easy and tastes delicious. My whole family loves it!
Parmesan “Croutons” by Ina Garten

This is an awesome pairing with ANY fall-winter soup. Recently, I had left over sourdough bread, so I just cut it into smaller pieces, instead of going out and purchasing a baguette.
Flourless Chocolate Cake

This is a favorite among my friends during the holiday party season. Specifically the creme fraiche whipped topping, it truly makes this a decadent dessert. I’ve even sprinkled Fleur de Sel Sea Salt when serving a slice.
